The holiday season
It seems everyone we speak to at the practice is heading to somewhere exotic. While there is always a huge sense of excitement when
travelling abroad, being on a plane is not ideal for our bodies.
To minimise the discomfort and damage involved, always drink plenty
of water, try to avoid alcohol and move about the plane as much
as you can, especially if you are on a long haul flight.

It's worth doing a few simple stretching exercises in your seat too.
Try this: sit up straight and use your hands to lift your left knee
up towards your right shoulder. Don't drop your shoulders as you do it,
hold for a few seconds then repeat on the opposite side.

Asian cuisines are some of the healthiest on the planet as foods are mostly locally sourced. Here is one of our favourite snacks, inspired by our Indonesia trip.
Coconut Muffins
590 ml coconut milk
15 ml water, or as needed (optional)
200 g white rice flour (or 60-70 g coconut flour)
185 g shredded unsweetened coconut
6 g salt
Plus 4 tablespoons of honey and 4 heaped tablespoons of raisins (optional)
Grated nutmeg

Preheat the oven to 375º F/190ºC
Grease some mini-muffin pans.
Mix together the coconut milk with the water in a mixing bowl. Stir in white rice flour, shredded coconut, and salt.
Stir in the honey and fruit then spoon the mixture into the prepared mini muffin cups.
Bake in the preheated oven until the tops are golden brown and crusty, about 30 minutes.

These little muffins will be quite dense and chewy, so you might like to add a teaspoon of baking power. Likewise you can adjust the ratios of honey, fruit and nutmeg to taste. Try a quarter recipe first so you can test out the flavours.
