Pumpkin Pie!
In the USA, Pumpkin Pie is loved all year round but it has special significance every Autumn at the Thanksgiving celebration. That doesn't mean we can't have it here though! We have popped a simple, healthy recipe option on the right for those of you who have never made one, but if you want a top-class Paleo version, and Estelle's favourite, try this one. It is beyond luxurious.
It's Autumn and, surprisingly considering the weather, this is a time of celebration – from Halloween to Bonfire Night, Remembrance Sunday to the Harvest Festival season. All these events are packed full of colour and positive vibes yet, at the same time, the clocks have gone back, the nights are drawing in and for many people, these months can feel less than glamorous.
At Naturally Chiropractic, we like to focus on ways to keep these months as positive as possible. Now more than ever, this is a good time to come in for a reassessment if you are feeling a little challenged but aren't sure why. It only takes a few minutes for us to check your body is working at it's best.
In addition, it's good to keep your head in an equally happy place. Every morning, consider taking some time for yourself to clear your mind. Take a brisk walk to somewhere other than work – stop in a serene park to admire the falling leaves or divert to the beach to breathe in the fresh sea air. If it's easier for your schedule, spend lunchtime at an interesting art gallery or hide away in a cafe, turn your phone off and get immersed in a book... you know, the paper sort!

Naturally, she will check-in quickly with family, knowing that you will be in the very capable hands of Megan Lilburne, who some of you may have met previously.

INGREDIENTS
For the crust:
125 grams almond flour
3 tablespoons organic ghee or coconut oil
pinch of sea salt
For the pie:
1 whole butternut squash or pumpkin
175ml coconut milk
125 ml honey
3 eggs
Half a teaspoon each of ground cinnamon, ginger, nutmeg and cloves
1/4 teaspoon salt
INSTRUCTIONS
• Cut a whole butternut in half and roast until it is soft; spoon out and discard the seeds; scoop the squash from the skin and let cool completely.
• While the squash is cooling, mix the crust ingredients into a dough then press into quiche dish or tart ring and bake for 10 minutes at 170ºC.
• Add the squash chunks and remaining ingredients to a food processor and process until smooth.
Pour the filling into the crust and bake for 50 minutes, or until filling is just set.
• Cool completely then refrigerate for 2 hours.
